| | Now This Is My Idea of Eggs for Dinner | | The first things that come to mind when I think of eggs for dinner are fried rice and egg drop soup, because I often want dinner quick-fast and eggs are usually the last fresh protein in my refrigerator. But there's an entire world of recipes that shine a bright (night) light on the simple egg. Similar to other great equalizer ingredients such as rice, the egg is universal and appears in a myriad of dishes around the world. So let's go Spanning the Egg-lobe… shakshuka (North Africa), eggs poached in a spicy tomato stew; carbonara (Italy), that classic pasta swathed in egg yolk, bacon and cheese; egg foo yung (China), an umami filled omelet served with rice; and tortilla espanola (Spain), a potato and onion omelet served as a tapa. Returning home from our world eggs-pedition, eggs for dinner can look just like your favorite all-day-breakfast diner: omelets/frittatas filled with your favorite savory ingredients. I happen to be obsessed with these Philly cheesesteak and pizza omelets. I am also not mad at a savory bread pudding with aromatics, cheese, and meats. A big salad and wine would make it a perfect meal for me. Eggs for dinner can also be a social gathering we like to call The Angel is in the Deviled Eggs. No longer just for afternoon tea, cookouts, and Easter, deviled eggs are a boon of perfect joy to share at your next cocktail party. Let your imagination go wild! Take the classic or spicy horseradish or mayo-less guacamole and add some decadent seafood and top with caviar. And no eggs for dinner cocktail party is complete without a menu of the best egg white cocktails… I eggs-claim! It embraces all of our favorite foods in their already perfect state and guilds that lily with a soft boiled, poached or sunny-side-up fried egg for the perfect runny yolk.
