Have you seen it? Our newest series for YouTube, It's Elementary, is where my fellow editors and I nerd out on some iconic foods and recipes from our library. We break each recipe down with tips, tricks and more.
 
Lauryn was first out of the gate with the American classic, apple pie. She showed off her baking prowess on everything from crust making and decorating to the best apples and how to prepare them. I went savory on my first episode with chili and man, did I have fun doing it.
 
There are some great debates about chili: Beans or no beans, its origins, tomato base or not, rice or spaghetti? You read that right. We will get to it. Either way, chili is just good, honest, satisfying food, and I was happy to be the conduit of what I call "the chili feels."
 
I started with the humble five-ingredient classic chili: Ground beef, kidney beans, onions, chili powder, and tomato products. Give it twenty minutes and a couple of traditional toppings, and a food hug is squeezing you tight!
 
From the classic, I explored vegetarian chili. Spiced with cayenne pepper and filled with black beans, corn and red bell peppers, it can be served hot by the bowlful, or cold as a salsa. The crispy tortilla strips and toppings add great texture.
 
The last chili is definitely my favorite. We call it turkey green chili, but I simply refer to it as white chili, because of the ground turkey, cannellini beans, and hominy used. However, this chili would not be the same without the copious amount of poblano peppers flavoring the tomatoless broth. If all that is not enough, toppings of creamy Hass avocado, salty cotija cheese, and fresh cilantro and scallions will set your soul right.
 
If I could have added one more recipe to this video it would have been pork green chili, simply for its use of pork butt. Add the white chili toppings plus a dollop of crema and all will be right with your world.
 
Oh, I almost forgot … the spaghetti. Many people serve chili over rice (or at least I do), but talk to anyone in Cincinnati, and the only way to eat chili is over spaghetti with cheese and onions.
